In unit 3 we are literally going to get our hands in the dough.
To make good bread it is necessary to mix well all the ingredients: water, flour, air and heat. As we go, we have to feel with our fingers and our senses how the dough is turning, so we know when it’s time for it to rest and rise. Once more, time and attention are of utmost importance.
When we work in/with a community, we must remember this very special stage in making bread.
